Lots of problems getting juice out of them. Can be used for just about anything you use a potato for, but never tried a pejibaye made like massed pots.</description>

		<description>Thank you for your comment. I&#039;m glad you were able to eat pejibayes on your trip to Costa Rica. I think the pejibaye is too dry for juicing, although some people make a very strong liquor from it. Pejibayes are relatively high in protein.</description>
