		<description>Hi, Mike, George in Costa Rica!! Pejibayes are  a starchy, high in protein, \fiber, I have made bread, soups (like potato soup) but the best way is cooked with mayo. Lots of problems getting juice out of them. Can be used for just about anything you use a potato for, but never tried a pejibaye made like massed pots.</description>
